The noodles are made by kneading the dough immediately after the customer orders, and the freshly drawn noodles have an excellent chewy texture. The broth for the makguksu uses homemade dongchimi (radish water kimchi) broth. After adding a spoonful or two of the dongchimi broth served with the makguksu to taste, you can enjoy it as bibim (mixed) or mild dongchimi mulguksu (cold noodle soup) by adding mustard, vinegar, sugar, seasoned sauce, etc. according to your personal preference.
