Jeongin Myeonok is a Pyongyang naengmyeon specialty restaurant that started in 1972. It was selected by the Michelin Guide in 2017, 2018, and 2019. Every morning, they make noodles from buckwheat self-ground using a low-temperature method, and the naengmyeon is made with broth from first-grade Korean beef. Dishes such as hanwoo gomtang (beef bone soup), chadol suyuk (brisket boiled meat), hanwoo yukjeon (beef pancake), and hanwoo bulgogi jeongol (beef bulgogi hot pot) are cooked using only domestic Korean beef. The mildly flavored Pyongyang naengmyeon can be enjoyed more deliciously by placing nokdujeon (mung bean pancake) or suyuk on top of the noodles. Additionally, depending on taste, adding mustard or vinegar, or sugar to bibim naengmyeon, is recommended. After finishing the naengmyeon, rinse your mouth with warm noodle water.
