Geumyang Garden is a branch of Ihwa Garden, a renowned restaurant in the Hadong area, and has fully inherited Ihwa Garden's 20 years of know-how. Ihwa Garden, famous for its freshwater spicy stew made with corbicula, catfish, and freshwater crabs, has been introduced multiple times on major TV networks and is well known as a recommended restaurant by Hadong County. In particular, the cooking skills of Jeon Ok-i, the wife of owner Yeo Tae-bong, who learned from her mother from Gwangyang, Jeollanam-do for nearly 30 years, are top-notch.<br />The corbicula are purchased live from neighbor Kim Eun-uk, who catches them, and are boiled directly. When they are at their best, they are cooked in large quantities and stored in a -40°C quick-freezing room. Catfish and freshwater crabs are sourced from suppliers with over 10 years of business relations and are exclusively from the Seomjin River. The restaurant directly operates plum, pear, and persimmon orchards and grows its own vegetables, sourcing most herbs and seasonings directly. The enormous amount of plum extract made annually is used for seasonings and pickles. Even externally purchased ingredients are sourced as much as possible from Hadong, and items like anchovies and seaweed are selected from famous production areas in the South Sea—this is the ironclad rule of Geumyang Garden's shopping.
