Imun Seolleongtang is a restaurant with over 100 years of tradition and is said to be the oldest restaurant in Korea. Since opening in 1907, the secret to its longevity, operating in one location for a century, is said to be its consistent taste. The building of Imun Seolleongtang remains as it was during the Japanese colonial period. Seolleongtang is made by simmering bones such as beef leg bones, knee cartilage, cow head, and cow trotters, along with brisket, shank, ox tongue, and spleen for about a day, resulting in a light and delicious broth. To enjoy its true flavor, it should be eaten with sweet and sour kkakdugi (radish kimchi). Imun Seolleongtang is characterized by its clear, low-fat broth that is light yet rich in flavor. Due to its history, many elderly patrons visit this place. In recent years, it has been introduced in Japan and is becoming a popular spot for Japanese tourists as well.
