Namdaemun Galchi Jorim Alley was formed around 1988. At that time, inexpensive hairtail was braised spicy and hearty to suit the tastes of merchants, and it became famous as a food destination through media coverage and word of mouth. Originally, this area was a restaurant street, not an alley for braised hairtail. The first places to specialize in braised hairtail were Heerak Sikdang and Wangseong Sikdang, and as the dish gained popularity, nearby shops gradually changed their signs to braised hairtail.
Merchants personally purchase and use raw ingredients, and also make side dishes themselves. Among the raw ingredients, selecting the hairtail is considered most important. Although the origin of hairtail used varies slightly by restaurant, they use the highest quality domestic hairtail such as Yeosu hairtail, Jeju hairtail, Mokpo hairtail, and Busan hairtail. Additionally, there are slight differences in cooking methods, so even with the same braised hairtail, each restaurant offers a slightly unique flavor.
