Ujeong Hanwoo Myeongga is a beef grill specialty restaurant located in Jinjeop-eup, Namyangju. It uses only 100% female Hanwoo (Korean native cattle). The restaurant slaughters Hanwoo twice a week, on Mondays and Thursdays, which is when items such as yukhoe (raw beef), yuk-sashimi (raw beef slices), liver, cheonyeop (omasum), and offal arrive. The days when beef arrives are Tuesdays and Fridays, following the slaughter on Monday and Thursday; after being graded overnight in the slaughterhouse refrigerator, the beef is shipped and arrives, including cuts for grilling such as galbi (ribs), deungsim (loin), anshim (tenderloin), and chadol (brisket). By slaughtering in-house, there is no intermediate distribution process from farm to consumer, providing affordable and fresh raw meat. Female Hanwoo has a somewhat firm texture, which some may find tough, but the natural flavor of the meat is different from that of steer, with a rich, savory taste inherent to the raw meat itself. The natural savory flavor of female Hanwoo is also good for making soup. Liver and cheonyeop are served as complimentary side dishes. This is not a place that only sells 1++ grade Hanwoo; the grade varies with each slaughter.
