Chorok Tteul is a vegetarian restaurant that uses only natural seasonings, without any chemical additives such as chemical seasonings or fish sauce, to provide healthy vegetarian menus. Additionally, cabbage is pickled using roasted sea salt from which impurities and harmful components have been removed. Instead of using allium vegetables (green onion, garlic, chives, wild chive, and asafoetida; in Korea, where asafoetida is not available, onion is included), other vegetables such as turmeric are added to enhance flavor. The noodles are also made in-house by blending whole wheat, brown rice, black rice, glutinous brown rice, white beans, oatmeal, flaxseed, acorn powder, turmeric, and other ingredients, which is said to aid digestion.
