Only carefully selected domestic pork bones are used, supplied from bones directly extracted in the Anyang area. The broth is boiled directly over high heat. The noodles are thin hosomen, most suitable for the tonkotsu style, supplied directly from Korea's best noodle manufacturer, a Japanese-affiliated company. With a low water absorption rate, the noodles absorb the soup flavor well, and the thin strands can hold more broth, optimizing the rich soup taste. They are cooked to a slightly firm texture by default; if you prefer a softer texture, you can request it along with your vibration bell number after ordering. Offerings include tonkotsu ramen with rich pork bone broth, and maze-men, a Nagoya-style Japanese mixed noodle dish with Umai's special stir-fried toppings and fish powder.
