The clay-baked duck, cooked in a kiln at high heat for over 3 hours like boiling medicinal herbs, is the signature dish here. The duck is served on a pan over a gentle low flame so it doesn't cool down at the table, and as time passes, the outer skin becomes golden and crispy like scorched rice. In addition, duck soup, smoked duck, sulfur duck boiled in broth, janchi-guksu (banquet noodles), and dongchimi-guksu (cold radish water kimchi noodles) are also popular.
