The owner spent a long time searching for a pig breed with rich juices in the lean meat, a springy and chewy texture, and well-developed fat flavor, and the answer was found in the YBD pig, a crossbreed of Yorkshire, Berkshire, and Duroc pigs. Special cuts such as bone-in samgyeopsal (pork belly) and neck collar (deung moksal) are grilled on a cast iron plate heated over charcoal fire, ensuring the meat cooks without burning and tastes delicious.
