The signature temple set meal includes lotus root salad, acorn pancakes, soybean paste cakes, fried seaweed, and grilled tofu with sansho pepper, followed by about 20 side dishes including seasonal herbs and pickles, along with well-cooked stone pot rice. Since dynamic foods cause the body to become heated, easily excited, impatient, and aggressive, temple cuisine does not use dynamic meats, fish, salted seafood, or the five pungent vegetables (green onions, garlic, wild chives, leeks, and asafoetida) that cause heat, nor chemical instant seasonings.
