Ilsan Gyoja first opened in 1981 as a small shop in Ilsan Market selling chicken kalguksu (handmade noodle soup). Later, in 1986, it opened its own independent store, developing from a single menu of chicken kalguksu to include clam kalguksu, king mandu (dumplings), and pajeon (scallion pancakes), which it continues to operate to this day. The broth for the clam kalguksu is made daily with fresh clams sourced from Gochang every morning and a stock brewed from over ten healthy ingredients. The chicken kalguksu features a broth made by blending domestic raw chicken bones and chicken stock with vegetable stock, characterized by a rich and smooth flavor. The noodles, made from hand-kneaded dough and cut by hand, are chewy and tender, perfectly complementing the broth for an excellent taste. Additionally, the restaurant offers handmade king mandu, which pairs wonderfully with the kalguksu, and crispy, light pajeon.
