The signature menu item, bok kalguksu (pufferfish noodle soup), is generously filled with seafood such as pufferfish meat and shrimp, and topped with plenty of water parsley. The pufferfish is fresh, so the flesh is elastic, meaty, and chewy, providing a good texture. The noodles are moderately thick, chewy, and have a soft feel when bitten. The broth is clean and refreshing, light and cool. Another popular menu item is bok twigim (fried pufferfish). The fried pufferfish at Busan Bok Kalguksu is not thickly battered, but fried golden and crispy, giving it a savory taste. The texture of the plump pufferfish meat when chewed is also good.
